Mai Lin quick and easy Pasta Salad
Today is my niece’s 2nd birthday and we are planning her a BBQ. I can’t believe shes already 2, I still remember her birth just weeks ago. I need to prepare a a dish for the BBQ, something that’s quick, light and yummy. So what did I make? I made pasta salad! Judging by the minutes it took everyone to scoff it all down, it was a complete success
Here is the recipe:
Ingredients
- Extra Virgin Olive Oil
- 1 Red Pepper/Capsicum
- 1 Spanish/Red Onion
- 500 grams of Pasta (can be Penne, Ribbon, Shell shapes – I used Penne)
- Balsamic Vinegar Glaze (this is the highly concentrated Balsamic Vinegar, mine has white truffle
). - Salt and Pepper
- 1 bag of rockets salad (or spinach)
Cooking instructions:
- Chop the onion and red pepper/capsicum in stripes
- Cook the pasta until al dente (to the tooth) then set aside
- Heat up frying pan, drizzle with a little bit of olive oil, stir fry the onion and red pepper until soft.
- Drizzle with balzamic vinegar glaze (add some hot water if it’s too thick)
- Season with Salt and Pepper
- Mix the onion, red pepper and rocket (or spinach) salad together with the pasta until all mixed through
- Season more with salt and pepper if required
- Served hot or cold
