Glass Noodle with Peanut Sauce

A friend of mine dropped by unexpectedly today so I had to and whip up a quick meal that will go well with the pinot grigio wine she brought over. I didn’t really have anything much in my fridge and pantry so my had to use my imagination. Using what I just had available, I came up with this Glass Noodle with Peanut Sauce dish. This is also a perfect vegetarian meal.

It took me literally 5 -10 minutes to whip up so I could spend quality time with my mate. Bon Apetite!

Ingredients:

  • Glass Noodle (you can buy this in any Asian Groceries), alternatively you can use mung bean noodle or bean thread vermicellis. The key here is textures.
  • 3 tablespoons of chunky peanut butter (or smooth)
  • half a cup of hot water
  • Julienne sliced cucumber
  • 1/2 teaspoon of sesame oil
  • 2 – 3 tablespoons of soy sauce
  • salt and pepper to season
  • Optionals – Coriander, thinly sliced  spring onions, deep fried shallots, chilli oil/powder as garnish

Cooking Instructions:

  • Soak the glass noodle in hot water
  • mix the peanut butter and hot water in a bowl until fully blended
  • add the soy sauce and sesame oil
  • drain the glass noodle and mix it to the sauce
  • Top it off with julienne slice of cucumbers
  • Garnish with either or all – coriander, spring onions, deep fried shallots, chilli oil/powder
