Mai and Her Dinner Party Creations (Left to Right) - Yellow Rice, Broncollini, Lamb Racks

I was hosting a dinner party at my place and managed to cook up a storm of food including my speciality Roast Lamb Rack (see recipe below). I also managed to serve a couple of simple sides of Broncollinis (see recipe below) and Yellow Rice. The dinner party was a success! Everyone polished the food quite well. At the end dessert was a simple fruit salad.

Roast Rack of Lamb A La Mai

Ingredients:
1 Rack of Lamb (Serve 2 hungry people thus multiply for a number of people).
Wholegrain Mustard (enough to coat the lamb – I used 375 ml per 1 rack of lamb).
Juice from half lemon
Olive Oil
Salt and Pepper
One head of Garlic

Methods:

Pre-heat Oven to 180 C

Put one head of garlic in a small ramekin with 1 tablespoon of water and a dash of Olive Oil and Roast until Garlic’s soft and buttery.

Mixed buttery/soft garlic with wholegrain mustard and lemon juice

Cover Lamb with the above mixture, sprinkle with salt, pepper and olive oil

Roast for 1.5 hrs in 150C oven or until pink/well done (to your liking)

Rest for 5-10 minutes before serving.

Broncollini A La Mai

Ingredients:

2 bunches of broncollini (serves 3 people)

2 tablespoon of oyster sauce

1 tablespoon of Kecap Manis (Sweet Soy Sauce) – replace with 1 tablespoon of sugar and 1 tablespoon of soy sauce if you cannot find this

1 tablespoon of soy sauce

2 tablespoon of water

pinch of salt and pepper

olive oil

Methods:Put oil in frying pan with broncollinis

 

Sprinkle all the above ingredients

Stir fry for 7 minutes or until cooked
